Pedigree:  Domaine Trapet Pere et Fils is one of the greatest estates in Gevrey-Chambertin dating back to the 1870's. The Domaine has the most notable holdings in all of Burgundy with significant property in the grand crus including the venerable Chambertin. Jean-Louis Trapet, with his father Louis, has run the Domaine since 1993 with a deft touch. In the endless pursuit of sustainable viticulture and the most authentic representation of terroir, Jean-Louis transitioned to biodynamic principles and today all vineyards are Demeter certified biodynamic. Though Domaine Trapet is perhaps best known for its Grand Cru bottlings, their complete hierarchy of wines shows a sophistication, elegance, purity and attention to detail both in the vineyard and the cellar, which highlight their impeccable terroirs.

Winemaking
Ostrea is a cuvee from four parcels totaling 2.5 Ha located predominantly in Brochon. These very old vines are situated on clay and limestone soils, originally planted in 2013 with a high percentage still of 90+ year old vines. Strict triage is practiced in the vineyards and the winery and typically 10% of the grapes will be rejected. Traditional methods are employed in fermentation; 30% - 60% of whole clusters, and 30% - 75% of new oak barrels are used depending on the vintage.

Tasting Notes:
Color: Beautiful light ruby, cherry hues. 
Nose: Hints of forest floor with spiciness, some minerality and savory undertones. Red and dark berry notes. Cherry and strawberry burst from the glass as you agitate it. .
Palate: Lovely balance of fruit, acid and tannin well integrated with subtle oak. The wine does have the classic power, broad shoulders and dense tannins of Gevery-Chambertin but they serve to drive the mid palate of the wine and promise ageing potential, while still preserving a silky mouthfeel.. The finish is long and harmonious, the precision and definition well integrated with the palate authority and backbone. A complete wine which goes beautifully with food but can also be enjoyed by itself.

Pair with Magret de Canard (rare duck breasts), roasted lamb with mushrooms and aged cheese.
