Pedigree:  Lean, focused Chablis from a slightly warmer though good vintage and from a famous Chablis family. The grapes for this wine are selected from a number of the top village plots in the family's holdings and grown in ancient marine Kimmeridgian clay. The vineyards are farmed sustainably and today, more than 30% of the vineyard is farmed organically. Picking is done by hand.
Grape Varieties: 100% Chardonnay
Vintage: 2015 - a modern, very good, Chablis vintage.

Winemaking
After hand harvesting, the grapes are immediately pressed and the must is fed via gravity to stainless steel tanks. The wine is fermented and aged in these temperature controlled stainless steel tanks. The wine is matured on lees and bottled early to preserve Chablis' trademark acidity and freshness. No oak is used and the wine does not undergo malolactic fermentation - classical Chablis winemaking.
Alcohol: 12.5%

Tasting Notes:
Color: Bright pale lemon yellow still, with hints of green.
Nose: Textbook Chablis nose, hints of chalk and crisp apples.
Palate: Focused, minerally with distinct palate authority. Long, faintly saline finish.
When to Drink: This wine is at its peak and allows you the guilt-free pleasure of immediate enjoyment. You'll want to drink all your bottles immediately anyway!
Serving Temperature: 50° F - 52° F
Food Pairing: Pair with sashimi, raw shellfish, sole amandine. Works beautifully with rich white fishes as the acid cuts through the oil.
